Real Men Eat Tofu!

My husband loves these and said I should share it on my blog, proof that real men eat tofu! The thing about tofu is if you don't like it then you did something wrong! It's all about how you season and serve it, by itself it  has almost no taste. The same can not be said for this dinner! 


Tofu Burritos with Black Beans and Spicy Slaw! 




Spicy Cabbage slaw 

1 head cabbage 
Juice from two lemons
1tsp cumin
1tsp cayenne
1/4 cup low-fat plain yogurt 
1/4tsp salt
1/4tsp pepper
2 tablespoons vinegar 


Mix all ingredients except cabbage. Cut cabbage in 1/2 and then in long thin strips. Mix cabbage with dressing. Let stand in fridge for at least 30 minutes for cabbage to wilt slightly. 


Tofu Burritos 
1 package extra firm tofu cut into about 1/4inch cubes
1tsp cumin
1tsp chili powder or cayenne 
1 cup onion diced
1 cup red or yellow bell pepper
2 cups zucchini
2 cups chopped tomatoes 
3 cups black or pinto beans 
whole grain tortillas
Low-fat sour cream or greek yogurt (I prefer greek yogurt)
1/2 cup shredded cheddar cheese 
Olive Oil 

Place tofu in a bowl season with cumin and chili powder. Heat olive oil in a skillet over medium heat. Add onion, bell peppers and zucchini saute 3-4 minutes. Add tofu and cook another 2-3 minutes. 

Warm tortillas, spoon in mixture and cheese, roll up. Top with tomatoes and sour cream to taste. 

Serve burritos with spicy slaw and black beans on the side. 

Serves 4
